Baked Parmesan Zucchini Bites Recipe


You guys are gonna definitely enjoy this little appetizer/snack. And better yet its healthy!!! It’s baked not fried so its so much better this way and also can I mention easier :) Just prep and pop into the oven and let it do all the work for you! Also you can easily double the batch.

I also whipped up a little healthy dip for it and its made out of sour cream, so i will put the recipe for you guys as well. Enjoy!

Baked Parmesan Zucchini Bites

  • 1 large Zucchini, sliced (about half an inch)
  • 4 tbsp Olive oil
  • 1/3 Cup Parmesan Cheese, Shredded
  • 1/3 Cup Panko (breadcrumbs)
  • ½ tsp Oregano Spice
  • Couple turns freshly ground pepper


  • 4 tbsp sour cream
  • 1 garlic clove, minced
  • freshly ground pepper
  • salt
  • 2 tbsp freshly squeezed lemon juice

  1. Preheat oven to 450º
  2. Grease a baking pan with wax paper (olive oil)
  3. Add the Parmesan cheese, bread crumbs, oregano and black pepper into a small bowl and mix
  4. Dip the zucchini slices into the olive oil and then coat with the Parmesan mixture, coating it evenly
  5. Place the zucchinis in a single layer to the prepared baking pan
  6. Bake the zucchini rounds for about 25 minutes, until golden brown
  7. Remove with spatula and serve immediately
