Carrot and Cheese Crostini Recipe

Crostini (tea sandwiches) are always a good idea! They go so well for dinner parties just appetizers or tea parties. What i love about this easy recipe is that One: its super quick to whip up, Two: you can make the spread a day in advance and serve the next few days! Who doesn’t love that!

Oh how I just love this cheesy goodness and its so much better than garlic bread although this has a nice kick of garlic in it! I tried these at my aunties place and knew i had to share the recipe with you guys! Whenever I make these for a party they are one of the firsts to go! SO SO YUMMY

Note: You can also serve this spread without baking it :)

Carrot and Cheese Crostini

  • 4-5 Medium Cooked Carrots , Grated
  • 4 Cups Marble Cheese, Finely Grated (or 2 cups mozzerella cheese and 2 cups cheddar cheese)
  • 3 Medium-Large Garlic Cloves, Minced
  • 1 cup real mayonnaise
  • 2 Wholewheat or White long Baguettes, Sliced (about half an inch)

  1. Bring a pot of water to a boil and add the carrots, Cover and boil 12-15 minutes or until they are firm-tender
  2. Remove the carrots from the water and allow them to cool
  3. Meanwhile grate the cheese in the small holes
  4. Add the cheese to a bowl with the mayonnaise and minced garlic
  5. Once carrots have completely cooled peel and grate on the bigger holes of a grater
  6. Add to bowl and mix all the ingrediets
  7. Preheat oven to 350Âș broil
  8. To a baking sheet add wax paper
  9. Spread a tablespoon of cheese mixture to the baguette slices and add to the baking sheet
  10. Broil for about 5-8 minutes until cheese starts to get golden
  11. Serve immediately

Makes 3 cups of spread

    I made these for my son’s 1st birthday party and they were devoured by everyone and everyone kept talking about how yummy they were! :) & I’m planning on making them for Sunday’s lunch:)
