Creamy Baked Potatoes

Don’t you love when you throw some things together for dinner with what you have in your fridge and it turns out really good so you always end up making it:) I love coming up with my own recipes. These potatoes are a great side dish that everyone will enjoy!:)

 

  • 4-5 large yellow flesh potatoes, cut into thin wedges
  • 1 1/2-2 cups whipping cream(heavy cream)
  • 1 cup cottage cheese
  • 3 tbsp mayonnaise
  • 1 cup dill, chopped
  • 1 cup green onions, chopped
  • 1 1/2 tsp salt(salt to preference)

  1. Add all the ingredients to a bowl and mix up
  2. Once you have mixed everything up let it sit in the bowl for half an hour
  3. Preheat the oven to 355°
  4. Add the potatoes into a large baking pan and cover with aluminum foil
  5. Bake the potatoes for an hour
  6. Once the hour is up poke a potato and make sure its soft, if not bake a little longer until soft
  7. Serve hot

This side serves 4-6
