Potato Topped Chicken Bake


You guys will love this dish!!! I got this recipe from my sister and we have been using it for a long time. Its one of those dishes that barely takes any time to prep.Its pretty much like a chicken stew with ranch mashed potatoes on top, two dishes in one! So easy to make and so so yummy to eat! So give it a try and let me know how it turns out:)


For the Filling:

  • 2 chicken breasts, cubed
  • 1/4 tsp dried thyme
  • 1/4 tsp seasoning salt
  • 1/4 tsp garlic seasoning
  • 1 tbsp oil
  • 1 small onion, chopped
  • 2 carrots, cubed
  • 2 cups broccoli, chopped
  • 2 cans cream of chicken
  • 1 cup chicken broth
For the Potatoes
  • 8 potatoes, i use yellow flesh
  • 1 cup milk
  • 1/2 cup ranch
  • 1 egg
  • 1 tsp salt
  • paprika
*depending on the potato size you might need to add a little bit of water


  1. Cut the potatoes in half and add to a pot filled with water
  2. Boil the potatoes for 20 minutes
  3. Meanwhile add the chicken into a skillet with the spices and fry for about 5 minutes until you see no pink
  4. Add the oil and then the vegetables
  5. Mix it and fry for 3 minutes on medium heat
  6. Add the chicken broth and let it sit for 5 minutes
  7. Then add the cream of chicken mix everything very well and cook for another 3 minutes
  8. Once the potatoes are ready drain them
  9. Mash them a little
  10. Then add the milk, egg ranch and salt
  11. Mash very well
  12. Now if the potatoes don’t seem smooth you can add a little bit of water. i didn’t (depends on the size of potatoes you used)
  13. Preheat oven to 375°
  14. Add the chicken mixture into a large baking pan
  15. Top of with the mashed potatoes
  16. Sprinkle with paprika
  17. Once oven is heated add the dish and bake for 25 minutes
