Stacked Eggplant with Garlic Bites


Such a great appetizer recipe! I got this idea from a friend, as soon as a seen a picture of them i knew they would be delish! They are different then all the other appetizers i have tried but i absolutely love this idea!!! I hope you guys enjoy:)

  • 2-3 large tomatoes, cut crosswise about 1/4 inch
  • 1 large eggplant, cut crosswise about 1/4 inch(keep in mind that the eggplant will shrink a little)
  • 2 carrots, shredded
  • 1 onion, diced
  • 1 red pepper, diced
  • 7¬†tbsp mayonnaise
  • 3 garlic cloves, minced
  • Cilantro, for topping
  • salt(to preference)
  • oil for frying

  1. To a hot skillet add a little bit of oil. On medium heat fry each eggplant piece for about 5-8 minutes until they are soft and golden brown
  2. Once you have finished with the eggplants sprinkle them all with salt
  3. Add about 3 tbsp oil to another skillet and once hot throw the carrots, onions and peppers in
  4. Fry for about 10 minutes until soft, make sure you mix every once in a while. Also sprinkle with salt
  5. Now add the mayonnaise and garlic to a small bowl and mix it up well. (if your not a fan of garlic only add 1 or 2 cloves)
  6. Now its time to put them together:
  7. Put the tomato on the bottom
  8. Then add a slice of eggplant
  9. Then spread about 1 tsp mayonnaise on top of each eggplant
  10. Add about 1 tbsp fryed vegtables
  11. And top of with cilantro

Makes about 15-18
