Zuppa Toscana

Zuppa Toscana is a Italian soup, its very popular. I got this recipe from my sweet mother in law and ever since i started making it i stopped ordering it from Olive Garden because i like this recipe much better! :) If you don’t like soup i guarantee you, you will love this soup anyways. Its just one of those soups that everybody loves! Also it still tastes great the next few days, you just gotta warm it up on the stove on medium heat and make sure it doesn’t boil.

  • 12 cups water
  • 6 red potatoes, sliced thinly and not peeled
  • 2 cups whipping cream(heavy cream)
  • 1 tablespoon VEGETA(spice)
  • 5 mild Italian sausages
  • 1 large onion, diced
  • 1 bunch of Kale, cut
  • 1 tablespoon fresh garlic, minced
  • 1/4 tsp red crushed chili flakes
  • Parmesan cheese for topping

  1. Add 10 cups of water to a large pot
  2. Once water has boiled add the chopped potatoes and VEGETA and boil for 20 minutes on medium heat
  3. Meanwhile in a frying pan push out the sausage from its skin and separate in the pan, fry on medium heat
  4. Once the sausage is no longer red add the chopped onions and fry for another 5 minutes
  5. When the 20 minutes is up add the sausage mixture into pot and then the whipping cream
  6. Add the sliced kale, minced garlic and red chili pepper. If you like your soup spicy add more
  7. Cook for another 5-8 minutes
  8. Add salt to preference
